Creamy Cucumber Salad Recipe


creamy cucumber salad recipe for the food processorThis healthy side salad uses cucumbers and yogurt to create a refreshing and light side dish perfect for summertime. The recipe calls for dill but any fresh summer herbs can be used. This is a perfect cooling match for spicy main dish items.





3 medium cucumbers (either use organic or peel them)

1/2 teaspoon sea salt

1 small onion

1/2 cup yogurt

1 tablespoon fresh chopped dill

1/2 teaspoon freshly ground black pepper



Use the slicing disc on your food processor to thinly slice the cucumbers. Transfer to a colander and toss with the salt. Set over a bowl to catch the liquid and let drain for 2 hours. Note: this is done to draw out liquid and allow the cucumbers to better absorb the yogurt. If you are in a hurry you may skip this step and decrease the salt by half. The results will still be delicious although slightly "wetter."

Transfer to a mixing bowl. Use the food processor multi-purpose blade to chop the onion. Add the onion and all remaining ingredients to the cucumbers and mix till thoroughly combined. The cucumber salad can be served immediately or chilled for several hours to let the flavors meld together. Enjoy!
