Quick and easy Whole Wheat Pita Pizzas

I just made a very quick and easy alternative to tradiional pizza. My food processor made preparation a breeze. I'm not much of a measurer, so this is more of a meal suggestion rather than an actual recipe. Here is what I used:

4 whole wheat pitas

1 jar of organic marinara sauce

1/2 of a red onion

a handful of fresh crimini mushrooms

1 green pepper

a block of fontina cheese

 

I topped each whole wheat pita with a few spoonfulls of marinara sauce. Then I used my food processor to chop the red onion, green pepper and mushrooms. I topped the pitas with the chopped veggies. I used my food processor to shred the fontina cheese and topped each pita with a handful of cheese. I baked them for eight minutes in a pre-heated 425 degree F oven. That's it! A healthy and quick alternative to take-out pizza.
