Stuffed Mushrooms

stuffed mushrooms recipe for food processorThese tasty stuffed mushrooms are an impressive appetizer perfect for a special occasion meal or a cocktail party. Gooey cheddar cheese provides just the perfect amount of decadence without overpowering the mushrooms. 





10 medium mushrooms, firm, closed caps

1 tablespoon olive oil

1 small onion, minced in food processor

1/4 tablespoon Worcestershire sauce

1 slice of whole wheat bread

1/4 cup shredded sharp cheddar cheese (use your food processor shredding disc)

2 tablespoons water

salt & pepper to taste


Preheat oven to 350° F.

Gently pull stems off of clean mushrooms and use the multipurpose blade on your food processor to chop finely (stems only.) Sautee the chopped stems and minced onion in the olive oil until tender, Transfer to a mixing bowl. Process the whole wheat bread into fine crumbs and add to onion/mushroom mixture along with the cheese, Worcestershire sauce, salt and pepper. Mix gently till combined.

Put the water and mushroom caps in a shallow baking dish. Fill mushroom caps with the mixture, mounding over the top. Bake for 20 minutes. Enjoy!
